
Vegetarian Black Lentil Bolognese
I occasionally attempt to make vegetarian bolognese and I always end up disappointed, but this time I was pleasantly supposed by how tasty it was! 😋🍝
What you’ll need:
- 1/2 cup black lentils
- 1 can mixed beans or (1/4 cup more black lentils)
- 1 cup veggie broth
- 3 cans of chili tomato sauce
- 2 tablespoons tomato paste
- 1/2 cup red wine
- 2 carrots, peeled
- 8 large mushrooms with stems removed
- 2 celery stalks
- 2 shallots
- 3 garlic cloves
- 1 teaspoon salt
- 1 teaspoon basil
- 1 teaspoon red pepper flakes
- Olive oil
- 750grams of pasta
Method:
In a food processor, mix mushrooms, celery, carrots, shallots, and garlic, until finely chopped. Add that into a pot with olive oil and fry on medium heat for 5-7 min.
Next add spices. Stir, and then add red wine until reduced. Add veggie broth, lentils, beans, tomato paste and sauce. Cook for 25 min.
Meanwhile, cook your pasta and grate some parmesan cheese.
Serves 6-7. 🍝
