Gnocchi with Gorgonzola cream sauce
I tried to replicate a dish I always get at an Italian restaurant that I go to pretty often. The dish they serve is with tortellini but I made this with gnocchi. You could make it with either one. 🍝😋
What you’ll need:
- 2 packages of gnocchi
- 50g Gorgonzola
- 1/4 white cooking wine
- 1 cup of plant based cream (I use the oatly brand)
- 1 garlic clove
- 1 shallot
- Parmesean
- 80g spinach chopped finely
- 1 cup frozen peas
- 1/2 cup chopped walnuts
Method:
In frying pan with edges, add olive oil, chopped garlic, and shallot on med heat and sauté until translucent. Add wine and cook until reduced. Add cream and Gorgonzola. Add some parmesan to your liking until melted and cream has thickened.
Cook gnocchi. Let the peas sit in hot water for five minutes. Chop spinach or put it in a food processor. Mix the sauce with the gnocchi once they are done.
Serve into a bowl topped with peas, spinach, walnuts, and more parmesan. Enjoy! 😋🍽

This looks delicious! I'm not a big fan of nuts, what would you recommend to trade it out with?

You can just leave them off, or use sunflower seeds instead.

Pine nuts could be another alternative. I don’t like walnuts either.
