Sometimes I buy garlic in bulk and find myself swimming in extra bulbs. When this issue does arise I make roasted garlic and store it in my fridge to use over the next two weeks. It is simple and eliminates food waste.
You will need:
- an oven proof dish
- aluminum foil
- Mason jar (or other sealed container)
- Fresh Garlic
- Olive oil
- salt & pepper to taste
Preheat the oven to 400 degrees fahrenheit or 200 degrees celsius.
Line baking dish with foil and drizzle olive oil in the bottom.
Prepare garlic by cutting off the tops so that they are flat and the cloves are exposed.
Place garlic cloves into the dish and drizzle generously with olive and sprinkle salt and pepper to taste.
Create a packet with the garlic by pulling in the corners of the foil to the center of the garlic
Bake cloves in oven for 30 mins and remove, let stand until cool enough to handle and squeeze out the roasted cloves into a mason jar.
Write the date on the mason jar and use in everything possible
