Roasted Garlic

Sometimes I buy garlic in bulk and find myself swimming in extra bulbs. When this issue does arise I make roasted garlic and store it in my fridge to use over the next two weeks. It is simple and eliminates food waste.

You will need: 

  • an oven proof dish 
  • aluminum foil
  • Mason jar (or other sealed container) 
  • Fresh Garlic 
  • Olive oil
  • salt & pepper to taste

Preheat the oven to 400 degrees fahrenheit or 200 degrees celsius. 

Line baking dish with foil and drizzle olive oil in the bottom.

 Prepare garlic by cutting off the tops so that they are flat and the cloves are exposed. 

Place garlic cloves into the dish and drizzle generously with olive and sprinkle salt and pepper to taste. 

Create a packet with the garlic by pulling in the corners of the foil to the center of the garlic 

Bake cloves in oven for 30 mins and remove, let stand until cool enough to handle and squeeze out the roasted cloves into a mason jar. 

Write the date on the mason jar and use in everything possibleWinking

Yum! My favorite thing to do with roasted garlic is mix it with full fat coconut milk and make a white pizza with tomatoes! 😍

Every time my wife makes oven-roasted vegetables, she also put in some garlics for me. This is a dish you have to taste to understand what it tastes like. It's sweet and very unlike fresh garlic.

When it has been roasted it is very soft and can be smashed with a fork and mixed into the butter. It is very easy to do and very tasty.
