This recipe is my go-to when I’ve had a long day of studies and I don’t have time to make a time-consuming dinner. It’s so simple, packed with protein, and it’s great left overs!
What you’ll need:
1 Yellow or white onion
2 cloves garlic
1/2 liter water
1 cup green lentils
1/2 cup favorite salsa or taco sauce
1 tablespoon chili powder
16 small tortillas
Chipotle chalula hot sauce
How to make it:
Sauté chopped onion, garlic, and jalapeño for 5 minutes.
Add lentils, water, spices and salsa.
Simmer for 20 minutes or until water has boiled down.
Then make your tacos!
