The Best Vegetarian Thai Fried Rice
This is the BEST Thai fried rice recipe you will find! It tastes just like a restaurant dish!
This makes 5-6 servings.
What you’ll need:
- 2 cups rice (I like brown)
- 4 cups water (or however much needed to cook rice)
- 1 yellow onion
- 1 tablespoon fresh ginger
- 2 garlic cloves
- 2 bell peppers
- 1 cup Fresh green beans
- 2 carrots
- 1 Broccoli
- 1/2 cup Peas
- 1/2 cup Cilantro
- 1/2 cup spring onion
- 3/4 Thai basil (so important!)
- Red hot pepper
- 2 eggs
- 1 cup crushed peanuts
- 3 tablespoon soy sauce
- 1.5 teaspoon brown sugar
- 1 tablespoon Thai red curry paste
- 1 teaspoon fish sauce
- Sunflower or peanut oil
How to make it:
- Cook rice. Set aside.
- Add chopped carrots and broccoli to a frying pan and sauté for 5 min with a little water just to cook the veggies a bit.
- Add oil, chopped yellow onion, hot pepper, garlic and ginger. Sauté for 5 min.
- Add green beans, bell pepper, and peas. Sauté for 3 minutes. You don’t want the veggies to be soft or raw but rather crisp.
- Set all of the veg mix into a large bowl.
- Mix the curry, soy sauce, sugar and fish sauce in the frying pan and sauté for 3 minutes.
- Add spring onion and Thai basil to pan and sauté for 30 seconds.
- Add rice. Turn off heat and stir the rice together with the sauce.
- Then in a large bowl add the rice mixture to the veg mixture.
- Meanwhile fry the eggs in the pan like scrambled eggs. Add to big bowl.
- Serve the fried rice topped with crush peanuts and cilantro.

I gotta try this! When I make fried rice, I usually "wing it" since my Asian pride doesn't allow me checking a recipe for Asian food, but I probably should cuz I'm not Thai :p
I made the mistake one time of not following a recipe for a Thai dish and all I could taste was fish sauce So now I know that I need to follow a recipe.
