This soup is so simple and yummy!
What you’ll need:
1 lb carrots, peeled and chopped
1 Apple peeled and chopped
1 fennel bulb core removed and sliced
1 can coconut milk
1/2 - 1 litre veggie broth
Salt and pepper
1 inch fresh ginger
Fresh bread and pumpkin seeds for topping
What to do:
Fry fennel in olive oil.
Add all ingredients except for coconut milk.
After 20-30 min, use a pulser to make a creamy soup texture.
Add coconut milk and serve!
