Vegetarian Swedish Meatballs

My boyfriend bought a bunch of potatoes for no reason, lol. So I decided we should make Swedish meatballs with them because we hadn’t had them in a long time.

What you’ll need:

  • 1 1/2 cup dry green lentils
  • 3 cup water
  • 1 cube veggie stock
  • 1/2 cup mushrooms (cut in quarters and roasted in a pan for 10 min)
  • 1 yellow onion
  • 1 cup ricotta
  • 2 egg
  • 1 cup panko bread crumbs
  • 1 teaspoon parsley, sage, thyme, red pepper flakes
  • Salt and pepper
  • 1 tablespoon Worcestershire sauce (or soy sauce)
  • 1 teaspoon Dijon mustard
  • Your fave mash potatoes to pair
  • Lingon jam
  • Light brown gravy

How to make:

Cook lentils with water and veggie stock for 25 min.

Fry mushrooms in olive oil for 10 min.

In a food processor mix lentils, yellow onion, and mushrooms until smooth-ish.

In a large bowl, mix the rest of the ingredients with the lentil mix. Form meatballs and place onto a baking sheet lined with parchment paper. Bake for 25 min.

Serves 6.

Of course the red pepper flakes make it into the recipe Laughing I didn't know Worcestershire sauce was in Sweden. Is it common?

Worcestershire sauce is quite common in storesin Sweden.

Haha, I don't know. Crisps aren’t my thing. Are those the same Walkers that make cookies with real butter?

I had to look it up as I wasn't sure what you meant haha! No they are not the same brand, this Walkers I would say is the more known one, considering how everyone eats crisps here!
