Vegetarian Swedish Meatballs
My boyfriend bought a bunch of potatoes for no reason, lol. So I decided we should make Swedish meatballs with them because we hadn’t had them in a long time.
What you’ll need:
- 1 1/2 cup dry green lentils
- 3 cup water
- 1 cube veggie stock
- 1/2 cup mushrooms (cut in quarters and roasted in a pan for 10 min)
- 1 yellow onion
- 1 cup ricotta
- 2 egg
- 1 cup panko bread crumbs
- 1 teaspoon parsley, sage, thyme, red pepper flakes
- Salt and pepper
- 1 tablespoon Worcestershire sauce (or soy sauce)
- 1 teaspoon Dijon mustard
- Your fave mash potatoes to pair
- Lingon jam
- Light brown gravy
How to make:
Cook lentils with water and veggie stock for 25 min.
Fry mushrooms in olive oil for 10 min.
In a food processor mix lentils, yellow onion, and mushrooms until smooth-ish.
In a large bowl, mix the rest of the ingredients with the lentil mix. Form meatballs and place onto a baking sheet lined with parchment paper. Bake for 25 min.
Serves 6.

Of course the red pepper flakes make it into the recipe I didn't know Worcestershire sauce was in Sweden. Is it common?
Worcestershire sauce is quite common in storesin Sweden.

I had to look it up as I wasn't sure what you meant haha! No they are not the same brand, this Walkers I would say is the more known one, considering how everyone eats crisps here!
