Italian Quinoa Patties
These patties are packed with protein and flavour! I think they are great paired with a soft boiled egg, they taste great alone since they are not dry at all, or you could even throw them in a salad. π₯π
What youβll need:
- 3/4 uncooked quinoa (cooked with half veggie broth cubes and 1 1/2 cup water for 12-15 min)
- 1/3 cup sun dried tomato
- 1/4 cup cheddar or parmesean
- 130g fresh spinach (cut up small in a food processor)
- 1/4 or more almond flour
- 1 cup panko
- 1 tablespoon Italian spices like basil, oregano, etc
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 3 egg
Method:
Mix all the ingredients in a bowl. If it is too sticky and not thick enough to form patties, add additional panko and almond flour. Fry in a pan in olive oil. 5 min each side on medium high. Enjoy! π
