This has turned out to be one of my fav veggie burger recipes! I highly recommend trying it out. It is really filling and satisfying. My boyfriend said it was better than the meat burger he had for lunch. 🍔😍
What you’ll need:
1/2 cup walnuts
1 1/4 cup green lentils cooked in veggie broth
1 cup almond flour
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
2 tablespoons pine nuts
2 tablespoons oats
1 tablespoon chia seeds
1/2 tablespoon flax seed
2 celery stalks
1 red onion (or white but not yellow!)
Spices: Red pepper flakes, Sage, cumin, curry, tumeric, cayenne, oregano, cilantro
Mix the nuts, lentils, seeds and veggies in a food processor until finely chopped with some bigger chunks for texture.
Mix this with the rest of the ingredients in a large both.
Makes 4-5 patties.
You can fry or bake for 20 minutes. I chose to bake.
Serve alongside sweet potato fries and topped with cheddar cheese, tomato, arugula, pickled jalapeño, yellow mustard, mayo, and sriracha.
