Vegetarian “Chicken” Parmesan

You guys, another amazing recipe you have to try! I used to making my vegetarian “chicken” parmesan with zucchini as the “meat” and then bread it, but I wanted to make something with more protein. It’s amazing!

What you’ll need:

For the patties:
  • 2 cans cannellini beans
  • 2 tbsp olive oil
  • 2/3 cup veggie broth
  • 1/4 cup soy sauce
  • 1 cup vital wheat gluten
  • 2/3 cups bread crumbs
  • 2/3 cups panko bread crumbs
  • 1 tsp poultry seasoning
  • Salt and pepper
For the breading, part 1:
  • 2 eggs
  • 1/8 cup non dairy milk
Part 2:
  • 2/3 cup bread crumbs
  • 2/3 cup panko bread crumbs
  • 2 tbsp nutritional yeast or parmesan
  • 2 tbsp flour
  • 1 tsp oregano
  • 1 tsp basil
For the topping:
  • 2 cans tomato sauce/marinara
  • 1 cup mozzarella
  • 500g Tagliatelle pasta

Method:

Preheat oven to 200C.

Mash white beans with a masher or put into a food processor. 2 mix all pattie ingredients in a large bowl. Knead until smooth.

Mix part 1 and part 2 or breading ingredients into two separate bowls. Form flat patties and dip into part 1 bowl and then into part two mixture and place onto a baking sheet with nonstick baking paper. Bake for 30 min flipping halfway through.

Meanwhile, heat tomato sauce, slice mozzarella, and cook pasta.

In the last 5 minutes of cooking the patties take out and place a spoon of tomato sauce on each and place a slice of mozzarella on each. Place back into oven for the remaining time.

Serve over pasta and tomato sauce. Enjoy! 🍅🍝😋
