Pasta Pesto Bomba Calabrese
Holy cow! This pesto was spicier than I anticipated it to be. 🌶 I threw this meal together in about 15 minutes. It’s really simple and delicious.
What you’ll need:
- 500g whole wheat Tagliatelle
- 50-200g of Pesto Bomba Calabrese
- 150-250g Mascarpone
- Parmesan to your liking
- Bag of fresh spinach
- Handful of pine nuts (or whatever you fancy)
- Olive oil
How to make:
Make the pasta according to directions. Once it’s cooked rinse with cold water, and add back to pot.
Add desired amount of pesto and mascarpone. Stir until pasta is coated. Drizzle with some olive oil. Add some grated Parmesan and stir.
Serve on a bed of spinach, topped with pine nuts. 🌶🤤

I forgot to add that I had a few leftover Italian Beanballs leftover from earlier in the week and I just added some in for some extra protein. They went together amazingly in this pasta recipe!
